Recipe: Rojak

1/2 pineapple, peeled and sliced

1 unripe mango, peeled and sliced

1 star fruit, sliced into stars

1 small turnip (bangkwang), peeled and sliced

1 cucumber, sliced thinly

2 jambu merah, sliced thinly

Sauce

6 fresh red chillies, seeded and pounded

10 bird chillies, pounded

4 tbsp black shrimp paste (haeko)

2 tbsp dark soy sauce

1 tbsp light soy sauce

50g belacan, toasted and pounded

1/4 cup roasted peanuts, coarsely pounded

2 tbsp toasted sesame seeds

1 cup castor sugar

1/2 cup lukewarm water

1 tbsp lime juice

Method:

Chill all cut fruits and vegetables well, then arrange attractively on a serving dish. Combine all sauce ingredients together in a mixing bowl and stir well to mix. Set aside.

To serve, either drip sauce over the fruits and vegetables or serve it separately in a sauce boat.

Serves two to three.
