Recipe: Eggless Cake
Eggless Cake
120g margarine110gm castor sugar
1 tbsp lime juice
250g bananas, mashed
1/2 tsp vanilla essence
Sift
250g self-raising flour
1/2 tsp baking powder
1/2 tsp bicarbonate of soda
Line and grease a 20cm square or round cake pan. Preheat oven to 180 – 190°C. Beat margarine, sugar and essence till light and fluffy. Stir in lime juice. Fold in sifted flour.
Add in mashed bananas with a metal spoon. Mix in gradually. Pour mixture into a prepared cake pan.
Bake in preheated oven for 40 – 45 minutes or until cake is cooked through when tested with a skewer.
