Mian Xian with Yellow Wine Pigs Kidney




Ingredients:
1 pig's kidney
60g pork (sliced)
2 bunches mian xian
50g shredded ginger
2 tbsps Chee Seng Sesame Oil
1 ybsp hua diao wine
80ml yellow wine
700ml water
some salt to taste

Methods:
1. Rinse the pig's kidney, cut into halves and remove the white 
glands. Cut surface of pig's kidney in a criss-cross pattern. Soak in 
water with hua diao wine for 30 minutes. Remove and rinse. 
Blanch pig's kidney in boiling water. Remove and drain. Add 
marinade, mix well and marinate for about 15 minutes.
2. Blanch mian xian with boiling water. Drain and transfer to 
thebowl.
3. Heat up Chee Seng Sesame Oil and saute shredded 
ginger. Add sliced pork and stir-fry for a while. Pour yellow wine 
and water, bring to boil and season with salt.
4. Add pig's kidney, return to boil. Remove from heat and transfer 
to the bowl of mian xian. Serve.
