Deep Fried Bananas with Caramel and Sesame Seeds


Ingredients:
100 g Plain flour
50 g Potato flour
4 Medium bananas
200 g Sugar
2 tablespoons Toasted Sesame Seeds
Oil for deep-frying

Methods:
1. Mix the two flours together in a large bowl adding in a glass of 
water (200-250 ml.
2. With a wooden spoon mix well until you create a smooth paste.
3. Cover the bowl with a cloth and leave to rest in a cool place 
for about 20 minutes.
4. Heat the oil in a tall saucepan. 
5. Slick the bananas in 1 cm thick slices and dip them in the flour 
paste. 
6. Deep-fry them in a tall saucepan of hot olive oil for 
approximately one minute until golden.
7. Drain on kitchen paper.
8. In the meantime, melt the sugar in a small pan with four 
tablespoons of water and stir until the mixture turns a light 
caramel color. 
9. With the help of a long wooden skewer, pick up the banana 
fritters and dip into the hot caramel sauce.
10. Place them on a grill rack; sprinkle some sesame seeds on 
top and leave to cool until the caramel has crisped.
11. Place them into a bowl and serve them with good quality 
vanilla ice cream.
